REDFISH ON A HALF SHELL

Ingredients
  • 2-3 lbs of redfish fillets WITH SCALES ON
  • 1/2 cup olive oil
  • 6 garlic cloves minced
  • 1/4 med onion chopped finely
  • 1 tbsp cracked pepper
  • 1 tbsp sea salt or season all
  • juice of one small orange
Directions
in the microwave or over a flame heat the all the ingredients except the orange juice for about 30 sec in microwave or until about 175 degrees on stove top. let it sit for about 5 minutes to let all flavors incorporate into the oil. add orange juice and spoon onto fillets garlic onion and all other ingredients as well. let fillets sit for about 30 minutes. on a med-high charcoal or gas grill put the fillets scale side down and let them cook until ready for about 10-15 minutes the scales will be charred but your fillets will be fine.
Other Notes
serve with fire grilled vegetables and steamed rice.
