Ingredients
  • Pickling salt
  • White vinegar
  • Sugar
  • bay Leaves
  • mustard seed
  • whole allspice
  • black peppercorns
Directions
  • Cut Fillets BONES and all 1/4 chunks
  • Cover with Brine 2 C. Salt 8 C water
  • Put if clean container 48hr in fridge
  • Drain & rinse with water
  • Place fish in vinegar for 24 hr in
  • fridge Drain and do not rinse
  • Brine mixture bring to boil & cool 4 c vinegar, 10 cloves, 8 bay leaves, 4 tsp mustard seed, 2 tsp whole allspice 2 tsp black peppercorns,
  • Add lots of onions and fish cover with brine mixture back to fridge
  • Other Notes
    Ready in about 4 days great on crackers with favorite beverage
