Ingredients
  • 4 catfish fillets
  • 3/4 cup yellow cornmeal
  • 1 tsp salt
  • 1/3 tsp pepper
  • 1/2 tsp cayanne pepper
  • 1/2 milk
  • 1/4 tsp garlic salt
  • cooking oil
  • 1/2 cup flour
Directions
Mix together your cornmeal, flour, salt, cayenne pepper, pepper, and garlic salt. Put milk into seperate bowl. Dunk fillets into the milk and then into the flour mixture. Coat the fillets and shake off the excess batter. Deep fat fry your fillets in 350 degree oil for 5-7 minutes, or until golden brown.

I would like to say one more thing. People tend to add too many spices to their catfish batter and to me it will ruin the taste of your fish if you are not careful. This is a good recipe for fish.

This is the most basic and best batter recipe you can find. I like to soak my fish in salt water over night to take away any river or mud taste they may have. It will make your fish taste a lot better.
