Ingredients
  • 1 pound halibut (chunked)
  • 2 cans stewed tomatoes
  • 1 can cream of coconut (15 oz.)
  • 1 cup heavy cream
  • 1 tablespoon basil
  • 1 teaspoon garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Directions
1 In a large pot , mix in the tomatoes, basil, salt, pepper and garlic. Bring to a boil while stirring.

2 Add the halibut and cook for 5 to 8 minutes. Reduce the heat and slowly stir in the heavy cream and coconut cream.

3 Simmer until heated threw.

Other Notes
You may want to try scallops, instead of halibut.
