Ingredients
  • 1 Spanish Mackerel (around 3 pounds)
  • Butter or Mayo
  • 1 Lemon
  • Tony's or preffered spices
  • aluminum foil
Directions
First fillet each side of the fish leaving the skin on. These fish are not extremely large, so leaving on the skin makes sure you get the maximum amount of meat. Then take the pieces of meat and make slits on the meat side. Then squeeze lemon over the fish so that it is lightly covered in lemon juice. Then spread either butter or mayo on top of the lemon juice. Sprinkle your spices on top and let it sit in the refridgerator for 20 minutes. While that is marinating fire up the grill and let it get warmed up. When the grill is fairly hot and the fish has marinated, then get some aluminum foil and spread it on the grill. Take the fish out of the fridge and dry off the skin side of the fillet. Place the fillet skin side down on the aluminum foil. When the fish is done the skin will stick to the aluminum foil. Then enjoy your meal.

I have been using this recipe for years with slight variations. Usually I steam the fish instead of Grill or bake it and everyone loves it
