Make sure fillets are well trimmed and season with salt, pepper and garlic powder. Put in sealed bowl and store in the fridge for about an hour. Drain any liquid from the fillets and add the mustard. Mix until all fillets are evenly coated with mustard then dip in the meal and cook until golden brown.

It is appropriate here in the South to serve with Fries, Hush-puppies and Iced Tea.
