Ingredients
  • perch filletes
  • horseradish
  • ketchup
Directions
Cut perch fillets into bite size pieces. Add to boiling water until done. Drain and chill in ice water. Drain and lay pieces over a bed of ice to serve. They make a great substitute for shrimp.

The cocktail sause can be purchased seperately or prepaired from a mixture of ketchup and horseradish (to taste).

I have tried this recipe and I can assure you it is a super appetizer, especially when serving steak as main course. It is a delightful change to boiled and chilled shrimp!
