Ingredients
  • 4 (6-ounce) trout fillets
  • 1 tablespoon olive oil - divided
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup fresh breadcrumbs
  • 1 teaspoon curry powder
  • 1 teaspoon chili powder
  • 1 teaspoon pumpkin-pie spice
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon ground nutmeg
  • Watercress sprigs (optional)
Directions
Preheat oven to 450º. Place fillets on a baking sheet. Lightly brush fillets with 1 teaspoon oil, and sprinkle with salt and black pepper. Combine breadcrumbs and the next 6 ingredients (breadcrumbs through nutmeg) in a small bowl. Pat the breadcrumb mixture onto fillets, and drizzle 2 teaspoons oil evenly over fillets. Bake at 450º for 8 minutes or until fish flakes easily when tested with a fork. Garnish with watercress sprigs, if desired.
