Mudfish Stew

Ingredients
  • 3 or 4 slices salt pork
  • 4 lbs peeled and sliced potatoes
  • 2 lg. onions
  • salt & pepper to taste
  • lg bowfin (mudfish)
  • bottle of ketchup
Directions
Render the salt pork in a large stew pot. Add sliced onion & potatoes. Toss to mix salt and pepper, bottle of ketchup. Mix in and bring to boil. Reduce heat until potatoes are almost tender. Add large chunks of fish. Cover and simmer 15 to 20 minutes or until fish is cooked. Serve over cooked white rice. This is a delicious way to serve this fish.

i live in north carolina and have always wondered how to cook all the bowfins i catch while trying to get catfish. good recipe. try adding lots of ground hot red pepper.
