Trim waleye fillets so there are no bones(very easy).Cut to size so the walleye fillet is close to the size of the slice of bacon. Put 1 slice of bacon on each side of 1 fillet. Thread onto the skeewer so that the bacon won't fall off. (in and out three times) I found that this method cooks best, you can cut walleye into chunks and wrap chunks, then slide onto skeewer like chucks of beef, but the bacon cooks better the other way. Cook on outdoor grill until bacon is done,coating with BBQ sauce half way through and at the end . ENJOY!! There awesome!!!!
