Filet fish and remove pin bones then wash off and pat dry with papertowell try not to pat fish slime on to meat side. Mix all ingredients togeather well in bowl.In flat container put salmon meat side up then pour mix over salmon.Brine for 12 hrs minium. Smoke meat side up for 8 hrs or 3 pans of 1/2 alder with 1/2 apple if it's too soft after you can put in oven at 325 deg. but keep an eye on it .. I think you will really enjoy this very special mixture .
