Ingredients
  • 3 1/2 lbs. steelhead-skinned & filleted
  • Lemon pepper
  • Seasoned salt
  • Squeeze butter
  • Lemon wedges
Directions
Season fish liberally with lemon pepper and seasoned salt. Rub seasonings into fillets. Arrange fillets in greased fish basket. Grill over high heat until fish is lightly browned on both sides. Before removing fish from grill, squeeze generous amount of squeeze butter on fillets. Flip basket; apply more butter. Allow butter to flame slightly; flip basket again until browned on both sides. Remove from grill. Serve with lemon wedges.

This was simply delicious.

I had a chance to test this recipe twice this week, both times people said again and again how amazing the fish was! I made only what modification.. I could not bring myself to put squeeze butter on my catch, so I used the real thing. Thanks for posting the recipe.
