Herb Stuffed Salmon

Ingredients
  • whole salmon - dressed - head off - usually about 10-12 lb
  • Basil leaves
  • Tarrogon
  • Slices of lemon
  • Shrimp & Bay scallops
  • Bread Crumbs
  • Salt & Pepper
Directions
Stuff with layers of fresh basil leaves and tarrogon, slices of lime, shrimp and bay scallops. Sprinkle inside with bread crumbs, salt and pepper.

Rub outside with salt, pepper, squeeze lime juice over entire fish.

Wrap in Parchment Paper like an envelope, sealing all edges.

Bake in 350 degree oven for about 30-45 minutes, depending on thickness and desired doneness.

Serve with sauce made from sour cream mixed with tarragon and lime juice mixed with basil and olive oil (good one).

When you open the parchment paper the aroma is outstanding and guests love to be there. Serve on platter and let guests choose the piece based on how rare or well cooked.

Excellent!! I used fresh dill as the herb, as that's what I had in the fridge. Also I discovered at the last minute that one guest is VERY allergic to shrimp so I just cooked them separate and served on the side. Still Fabulous. I've cooked a lot of fish but never used parchment paper. It's my new fav product!!

You were so right! It was absolutely divine! I had a 12 lb.sockeye,MMMM! I put about 1/2 c. ch.shallots along with everything else you suggested. This will be one of my favourites, Many thanks to the chef whomever he or she may be!
