Ingredients
  • 1 1/2 to 2 lb. pickerel
  • 1 tbsp. olive oil
  • 1 large onion sliced thin
  • 2 tbsp. chopped pimiento
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne
  • 1/4 tsp. ground mace
  • 6 thick slices tomato
  • 3 tbsp. finely chopped green onions
  • 1 c. thinly sliced mushrooms
  • 1/4 c. lemon juice
  • 1 c. fine dry bread crumbs
  • 1/2 c. melted butter or margarine
Directions
Choose 6 fish fillets the same size or cut ones into 6 serving-size pieces. Heat oven to 350 degrees F. Spread oil in 13x9x2-inch baking dish. Seperate onion slices into rings; spread them plus pimiento on bottom of pan. Lay fillets on top; sprinkle with salt, pepper, cayenne and mace; top each with tomato. Sprinkle green onions and mushrooms over all; drizzle wiht lemon juice. Combine crumbs and butter; sprinkle on top. Bake, uncover, till fish flakes easily with fork, about 30 minutes.

very good, seems like a lot of work but it was worth it - used some fresh tarragon on the tomatoes - gave a slight flavour of licorace.

One of the more unusual but it was absoutely fantastic. Great way to feed a group.
