Cut bacon into small pieces and fry gently in a large fry pan. After 3 or 4 minutes add chopped onion and green pepper. Fry 6 to 7 minutes, stirring occasionally. Cut fish into 1 inch cubes and toss a small amount at a time into flour that has been seasoned with salt and pepper. Add fish to vegetables and fry 3 to 4 minutes. Stir in tomatoes, bay leaf, sugar, salt and pepper to taste and sherry. simmer 10-15 minutes or until cooked. Serve with rice. Garnish with chopped parsley.
