Ingredients
  • 1 lb. walleye fillets
  • 1/4 cup flour
  • salt and pepper to taste
  • 1/2 tsp. paprika
  • 2 Tbsp. butter
  • 1 Tbsp. vegetable oil
  • 1/2 cup sliced almonds
  • 3 Tbsp. lemon juice
  • 1 Tbsp. chopped fresh parsley
Directions
Combine flour, salt, pepper and paprika. Dip fish in seasoned flour. In a large skillet, heat 1 Tbsp. of butter and oil over medium heat. Add fish and cook until close to the point of flakiness, about 5 minutes, turning once. Remove to serving platter. Over low heat add remaining butter to pan. Add almonds and cook, stirring until nuts just begin to brown, about 2 minutes. Stir in lemon juice and parsley. Spoon sauce over fish and serve.

Unbelievably, the most excellent walleye I have ever had. 10 times better than your fanciest restaurant. The mouth watering taste of the lemon gets your taste buds all working. I served it for guest and they just went on and on about it. The only change I made in the recipe was instead of using flour I used "Fryin' Magic" which is a light seasoned coating mix. Other than that I followed the directions exactly. I was tempted to cook the walleye longer but am so glad I didn't. It was done to perfection. This is added to my very special recipe list for impressing guests. Thank you!
