Pancake Ranch Crappie Fillets

Ingredients
  • 6 large crappie fillets
  • cyan pepper
  • black pepper
  • corn meal
  • ranch dressing
  • pancake batter
  • tobasco sauce
  • corn meal
Directions
Clean and prepare 6 large crappie fillets.

1. inject the fillets with a marinade mix made up of cyan pepper,black pepper, and tobasco sauce.

2. prepare a bowl of pancake mix, whichever brand you prefer. Add in a good portion of ranch dressing to the pancake mix

3. Roll the fillets into the corn meal and seal in the pancake and ranch dressing mixture.

4. Drop the fillets into hot peanut oil around 350 degrees.

5. Cook until golden brown usually about 10-12 minutes the fish will float when done.

6. Top with ranch dressing

Other Notes
Serve with something cold to drink a nice glass of ice team with fresh lemon will do the trick

For me, this recipe had too much ranch involved. If the recipe didn't call for so much ranch, it would have been really tasty. Topping it with ranch and the other places where it called for ranch were just too much!!!! It would have tasted better with Lemon Zest drizzled on top...too bad!

do not top with ranch you, need something tangier. otherwise tasty.
