Southwest Crappie Grilled Filletts

Ingredients
  • 8 crappie fillets
  • black pepper
  • salt
  • cajun seasoning
  • 1 jalapeno pepper
  • chunky salsa of your choice
  • butter
  • spanish rice
  • corn
Directions
Season the crappie fillets with salt,pepper,cajun seasonings and a light coat of butter. Place the fillets on the grill and cook until done. ( about 10-15 minutes )

Prepare a healthy portion of spanish rice and mix in a can of whole kernal corn. Slice the jalapeno pepper and mix into the rice mixture.

Place a large scoop of chunky salsa onto the cooked fillet, add desired amount of cheese and allow to melt onto the salsa and fillet.

Place the fillet onto the bed of rice and corn mixture and season to taste with salt and pepper.

Other Notes
A nice cold glass of beer of choice or a red wine goes very well with this meal
