Place them on a cookie sheet and coat them generously with a 50/50 mixture of coarse salt and brown sugar.
Let them stand uncovered for up to 8 hrs
Lightly rinse and place on grill rack or grill-type frying pan.
Let stand again for 3-5 hrs with a fan blowing on racks.
Sprinkle on lemon, lemon pepper, and teryaki glaze (optional) and place fillets on smoker racks and smoke for 7-9 hrs. Enjoy!!!!
