1/2 Cup --- Extra Virgin Olive Oil (Greek or Italian)
4 --- Lemons
1 Tbls --- Oregano (Preferably Greek)
Directions
This is a very simply and healthy way to enjoy your Red Snapper. Basically, all you have to do is clean and prepare your fish as you would normally do. Then, place whole fish on a oven dish for broiling. Using a sharp knife, cut 2-3 slashes diagnally across the side of the snapper, this will help during the cooking process to insure that the fish will be thoroughly cooked all over.
Next, Pour the olive oil over the top of all the fish, then squeeze 3 of the lemons over the snapper and now sprinkle the oregano over the snapper. Place in a pre-heated oven on BROIL, on the middle rack. Cook snapper for about 20 minutes or until done. You may have to turn the fish once halfway through the broiling procedure. Save th 4th lemon for the fish once it is ready for eating. Quarter the lemon and place a wedge on each plate with some parsley as a garnish.
Other Notes
A nice white wine and a greek salad on the side, and some fresh French or Italian type bread will compliment this dish well! Enjoy!
