Watermelon-Salmon Skewers

Ingredients
  • 16 wooden skewers
  • a 1 inch piece of fresh ginger chopped
  • 1/2 cup mirin (a golden sweet rice wine)
  • 1/4 cup sake (japanese rice wine)
  • 1/4 cup light soy sauce
  • 1/4 cup watermelon juice seeds removed
  • 2 tbs. rice vinegar
  • 1Lb.Boneless skinless salmonfilletcut into1/2inchstrips
  • Sesame seeds
  • 6 cups diced watermelon
Directions
Requires 2 hours for salmon to marinate. To make juice pulverise watermelon chunks in a blender or food processor and strain. You can either bake or grill the salmon to desired doneness. Prepare the marinade in blender combine ginger mirin sake soy sauce watermelon juice and rice vinegar. Blend until smooth pour into wide shallow container.

Thread salmon onto skewers and add to marinade turning to coat all sides. Cover and refrigerate for 2 hours. Remove skewers from marinade and place on baking sheet sprinkle with sesame seeds and bake until salmon is just cooked through.

Other Notes
Serve on platter with diced watermelon
