Start this recipe by cleaning and rinsing fish; pat dry. Place the 4 pieces, skin down, on an oiled broiler pan. In a deep well frying pan add the garlic and butter and stir over medium heat until soft. With a spoon butter remove the butter from the pan (leaving the garlic)and
