I have been looking at many sites to help me with my problem. I have the same problem with salmon. It is: I bought a frozen pickerel, as I have bought frozen salmon many times. I have learned to make fillets out of the salmon. They aren't very nice looking because I have had to teach myself how to remove the sking, and remove all the bones. Now I have a pickerel, and I am faced with the same problem. How do I bone it, sking it, and make it into filets?

You and all of the others start your recipes with presuming we already have the filets. Please create an article within, or separate from recipes on how to make filets from a whole fish with bones and skin. Thank you.
