Jewfish Wings

Ingredients
  • 1kg jewfish wings
  • Olive oil
  • 2 cloves garlic
  • Sprig rosemary
  • Brown malt vinegar
  • Self-raising flour
Directions
Cover the bottom of a large frying pan with olive oil and heat until smoking. Dust wings with self-raising flour, then place in the pan and fry until cooked. (the wings are cooked when the flesh of the thickest part is opaque). Arrange wings on plate. Chop the garlic and fry until brown using the left over oil in the pan, add the rosemary and an equal quantity of brown malt vinegar as there is of olive oil in the pan. Pour sauce on top of jewfish wings. (If cooking with gas, be careful, as once the vinegar has been added, the sauce will generally flambé.) Serve immediately.
