Pan fry in 1 tbsp hot butter 2-3 min. per side or until slightly browned.
Remove to a plate and keep warm.
Melt remaining butter and saute onion until tender.
Stir in tomato and water and simmer 3 min.
Place fillets in sauce, pour egg over and cook, stirring egg until just set.
To serve, sprinkle with green onion.
Serves 2. Enjoy!
