Broiled Pike

Ingredients
  • 1 lb skinless pike fillets
  • 1/4 c lemon juice
  • 1 tb olive oil
  • 1 tb chopped parsley
  • 1/4 ts thyme
  • 1/8 ts pepper
Directions
Place fillets in a baking dish that has been sprayed with a non stick coating. Combine remaining ingredients & pour over fillets. Cover & marinate for 30 minutes in the refrigerator, turning occasionally. Broil approximately 4-6" from source of heat for 8-10 minutes.
