Heat a deep fat fryer (with oil) to 350 degrees (if no fryer, then use a large skillet with oil). Beat 2 eggs into a large bowl. Dip the fish (whole or filet) in the egg. Lay fish in flour until it’s covered. Fry fish. If using deep fryer, fry fish for 4 minutes; if using skillet, fry fish for 3 minutes on each side. Fish should be crispy on the outside and almost done on the inside. DO NOT over cook fish (a little raw is fine). Take fish out and lay it to the side on some napkins to absorb the oil.
In a large skillet, melt butter at a high temperature. Amount of butter depends on you (usually ¼ of a stick will do). Once butter in melted, turn stove to medium and add minced garlic. Stir until garlic is lightly browned. Lay fish in the skillet. Slower add Oyster, Hoisen, Fish, and Soy sauce into the skillet. Sauces should be added around the fish on not directly on the fish. Sauces should blend with the butter, stir gently. After 3 minutes, turn fish to other side for another 3 minutes. Turn off stove and add green onions and cilantro into the skillet. And then Eat!!
