steak seasoning( i like onion and Garlic) Mesquite is good also

Directions
Start by filleting the drums and cut up into one to two inch pieces. Put the fish into a ziplock bag and add zesty Italian dressing. Let it marinate at least one hour (over night if you can). Cut up your onions and peppers into strips for the kabobs. Soak your kabobs in water if you are using wood. Put on a pepper then a piece of fish, then an onion, then a pepper, then a fish and so on until the kabob is full. Dont go longer than your grilling rack is. After putting all your kabobs together sprinkle them with the steak seasoning. Spray the grilling rack with cooking spray and put your kabobs in and grill.
