Ingredients
  • 1 pound panfish fillets skinned
  • 1/4 cup sliced black olives
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped fresh mushrooms
  • 2 scallions chopped
  • 4 eggs
  • 1/4 cup half and half cream
  • 3/4 ricotta cheese
  • 1/2 tsp. thyme leaves
  • 1/4 tsp. paprika
  • salt & pepper
Directions
Cut fillets into 1 1/2" long pieces 1" wide. Layer olives and vegetables in bottom of pie shell. Lay fish evenly over vegetable mixture. In a seperate bowl, combine remaining ingredients. Mix well; pour over fish. Place on baking sheet with sides. Fill sheet with 1/4 inch of water. Bake at 350 degrees for 35-40 minutes.
