Ingredients
  • 4 LARGE RADISHES
  • 1/2 CUPS CORN KERNELS
  • 4 OZ. CRABMEAT
  • 1/2 RIPE AVACADO
  • PEELED PITTED AND DICED
  • 1 TBSP MINCED RED ONION
  • 1 TBSP LIME OR LEMON JUICE
  • 2 TSP JALAPENO HOT PEPPER SAUCE
  • 1/4 TSP SALT
  • 24 DIAGONALLY SLICED ENGLISH CUCUMBER
  • CILANTRI LEAVES AND RADISH STRIPS GARNISH
Directions
1. THINLY SLICE ENOUGH RADISH TO MAKE 24 SLICES. FINELY CHOP REMAINING RADISHES. IN A SM. BOWL COMBINE CORN, CHOPPED RADISH, CRABMEAT, AVACADO, ONION, LIME JUICE, PEPPER SAUCE AND SALT: STIR WELL.

2. TOP EACH CUCUMBER SLICE W/RADISH SLICE. SPOON CRABMEAT MIXTURE ON TOP. GARNISH AND SERVE.
