Wash fish, which is dressed and scaled under cold running water. Pat dry wiht paper towel. Bone if desired. Sprinkle inside cavity with salt. Stuff loosely (3/4 c./lb. dressed weight). Fasten opening with skewers and loop with string as you would lace your shoes. Transfer fish to greased baking pan and brush with melted butter or oil. Measure stuffed fish at thickest part then bake in oven at 450 F for 10 minutes per inch of stuffed thickness. Garnish with lemon and parsley.
