Ingredients
  • 1 lb fresh whitefish fillets
  • 1/4 c all-purpose flour
  • 1/4 ts salt
  • 1/4 ts lemon pepper
  • 1 egg white
  • 1/4 c dry bread crumbs
  • 1/4 c cornmeal
  • 1 1/2 ts grated lemon peel
  • 1/2 ts basil
Directions
Start by cutting the fish into small serving-size pieces then in a bowl combine the flour, salt and lemon pepper.

Take the egg white and beat it until frothy and set aside. In a seperate bowl combine the bread crumbs, cornmeal, lemon peel and basil all together. With each piece of fish dip it into the flour mixture, shaking off excess. Next dip the fillet into egg white and coat with bread crumbs.

Spray a shallow baking pan with nonstick cooking spray like Pam and place the fillets on it. Bake in a 450 degree oven for approximetly 6 - 12 minutes or until the fish flakes easily.

I was looking for an uncomplicated recipe and ran through quite a few but this one I found to be the most appealing and required just a few ingredients. Will submit a review after I have tried it.
