For this recipe clean the mussels thoroughly and get rid of any which do not close tightly when lightly tapped.
Place the scrumpy cider, veggies and some pepper into a deep rimmed casserole dish. Bring the ingredients to a boil and then cover the dish and let it simmer for a few minutes, making sure that everything becomes soft. Finally add the mussels to the dish then cover and steam for 5 minutes.
