Ingredients
  • 1 or 2 Lobsters
  • 2 Sticks butter
  • 1 Lemon
  • 1 1/2 Cup of Your Favorite Champagne
Directions
Start this dish by placing 2 cups of sea water or just plain water with salt added into a large pot. Cover and bring the water to a boil. Add steaming tray to the top of the pot and place both live lobsters in it and cover. It takes about 15 minutes for a 1 lb lobster to cook so adjust accordingly to the weight of the lobsters you are using. I like to flip both lobsters at the 7-8 minute mark. When cooked the lobster meat should be pure white and elastic.

The small legs will pull out easily from the body and the tomalley should be green and firm. In a seperate sauce pan melt butter and add the lemon juice along with the champagne. Place this sauce in a small dish and use for dipping. Allow the lobster to cool for few minutes then get cracking and enjoy.
