Summer time Mahi Mahi Hunting- try trolling past whatever they are hiding under pulling a large bright lure. ( I have had good luck @ about 5 - 10 knots with a chrome / blue, chrome / red, chartruse / chrome lure)
In Galveston Bay Mahi Mahi like to hide up and under large sea weed patches, the dart out after the passing lure. You will know if the reel starts to sing when the fish hits. Simply slow the boat down and land the fish.
When the first dolphin is hooked try letting it swim around the boat withing ten or twenty yards. You'll notice the rest of the school will stay in close to the hooked fish, increasing the chance of multiple hook=ups.
